How many calories in couscous? 500 to 1,000 kcal per plate
Couscous calories: about 150 kcal per 100 g for a full couscous dish, so 500 to 1,000 kcal a plate depending on the meat, the grain and the butter. Numbers and tips.
A plate of couscous can be anything from about 500 kcal (vegetables, a sensible amount of grain) to 1,000 kcal or more (couscous royal with merguez, chicken and buttered grain). France's official food table, Ciqual, puts couscous royal at about 150 kcal per 100 g, and chicken couscous slightly higher. So the real question is how big the plate is — and what's piled on top.
Where the calories come from
Couscous is a full meal in one dish: starch, vegetables and protein. But the parts don't weigh the same.
- The grain: cooked couscous is roughly 110 to 170 kcal per 100 g, depending on how much water it soaked up. A plate easily holds 200 to 250 g.
- Butter or oil stirred into the grain: one tablespoon is about 75 to 90 kcal. In restaurants you don't see it, but it's usually there.
- Merguez: the heaviest item. Cooked, these spicy sausages come in at about 280 kcal per 100 g, much of it fat.
- Chicken or lamb: good protein, but a chicken thigh with the skin on still adds up.
- Vegetables and broth: carrots, courgettes, turnips, pumpkin — the lightest part, and the part that fills you up.
- Chickpeas: fibre and plant protein at a reasonable cost.

For a generous couscous royal, the rough split is about 300 kcal of grain, 75 kcal of butter, 280 kcal for two merguez, 250 kcal for a piece of chicken, and around 100 kcal for the vegetables, broth and chickpeas. These are rounded numbers — every family has its own recipe.
Sizing up your own plate
- Look at the grain: a big mound covering half the plate is often 250 g or more.
- Count the merguez: each one adds roughly 140 kcal. It's the single detail that swings the total most.
- Broth barely counts: ladle it on generously — lots of flavour, very few calories.
- Watch the second helping: couscous is a dish people go back for. Round two can add another 300 to 400 kcal.
Making it lighter without ruining it
- Double the vegetables and go a little easier on the grain — the plate still looks generous.
- Keep the chicken, but take the skin off.
- One merguez instead of two, or swap it for chicken or a meatball.
- Less butter in the grain: a drizzle of olive oil, or none at all — the broth keeps it moist.
- Add chickpeas: they're filling and bring fibre.
- Try wholewheat couscous for extra fibre.
